Turkey grilled sausage

Ingredients for 4 servings:

  • 1 kg turkey meat
  • 100 g bacon
  • 1 onion(s)
  • 2 garlic cloves
  • ¼ bunch chives, fresh
  • ¼ bunch parsley, fresh
  • ½ pack of feta cheese
  • 1 tsp, heaped pepper, mixed seeds
  • 1 tsp, heaped sea salt, coarse
  • 1 small egg(s)
  • basil
  • marjoram
  • rosemary

Homemade sausage

Run chilled turkey and bacon through the 4.5 mm disk of a meat grinder. Finely chop the onion and fry in a little oil. Roughly chop the garlic and grind it in a mortar with the mixed pepper, sea salt, basil, oregano, marjoram, and rosemary. Mix well with the onions and minced meat. Cut the feta cheese into very small cubes, finely chop the chives and parsley, and mix thoroughly with the mixture by hand. Freeze the mixture for about 30 minutes before filling; this makes filling easier. Meanwhile, soak the casings in hot water. Then screw the appropriate sausage nozzle onto the meat grinder. Thread on the casings, tying a knot at the end. Pour the sausage mixture into the meat grinder and turn slowly, filling the casings evenly. Twist off every 15-20 cm and then continue filling. I’ve found that it works best with a helper. I think homemade grilled sausage is great. You can easily vary the spices and create your own flavor. Then grill the sausage right away, as usual. I haven’t tried freezing it yet, as I only make as much sausage as I need for grilling.
