Ingredients for 1 servings:
- 1 cup oil
- 1 cup wheat flour
- 2 cup(s) spelt flour, whole grain
- ½ cup(s) sugar
- 3 eggs
- 250 g quark
- 2 tbsp pudding powder (vanilla flavor)
- 2 tbsp cocoa powder
- 1 packet of baking powder
- 1 packet of vanilla sugar
- 1 shot of milk
- e.g. chocolate, whole milk
- possibly chocolate glaze or powdered sugar
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
with chocolate center – cup recipe. Makes 24 pieces.
Beat the oil with the eggs, sugar, and vanilla sugar until fluffy. Add the quark, pudding powder, and a dash of milk and mix. Then combine the flour with the baking powder and add to the batter. Divide the batter and mix 1/3 of the batter with 1-2 tablespoons of cocoa powder (you can add a little more; the batter should be nice and dark and chocolatey). Preheat the oven to 180°C (top/bottom heat, gas mark 2). Now place a generous dollop (about 1 tablespoon) of the light batter into each muffin case, place a piece of chocolate into each case, and then cover with the dark batter. Bake for about 25 minutes. The muffins can, of course, be decorated with chocolate glaze, powdered sugar, or something similar. I usually leave them plain because they look so pretty. The batter is enough for me for 2 x 12 muffins (i.e., 24).
