Ingredients for 4 servings:

  • 250 g quark (low-fat quark)
  • 250 g low-fat yogurt
  • 2 cloves garlic
  • ½ cucumber(s) or
  • 2 cucumbers (country cucumbers)
  • salt and pepper
  • Paprika powder
  • Cayenne pepper
  • possibly herbs

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the low-fat quark and yogurt together until smooth. Peel the garlic cloves and chop into small pieces. Chop the cucumber(s) into small pieces (or grate them. I like to have something to bite into, though). Add the garlic and cucumber to the quark and yogurt mixture. Season generously with the spices and let it sit in a covered bowl, preferably overnight. Taste again the next day and adjust the seasoning if desired. If you like, you can also stir in herbs like parsley or chives. Tastes great with gyros, as a dip for potatoes and vegetables, and as a salad dressing.
