Udon with pork

Ingredients for 2 servings:

  • 250 g pork strips
  • 1 pack of udon noodles
  • 2 tbsp tomato paste
  • 3 tbsp sesame seeds, light
  • 3 tbsp soy sauce, light
  • 2 tbsp Soy sauce, thick dark
  • dashes Sriracha sauce, hot, optional
  • 1 tbsp sesame oil
  • some butter, optional
  • 1 handful of coriander, chopped, optional

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Heat the sesame oil in a non-stick pan or wok and fry the tomato paste for 1 minute, then add the pork and sear until it browns nicely. In a second small pan, toast the sesame seeds. Be careful, this cooks very quickly; make sure they are lightly browned but not burned. Set aside and let cool. Mix the meat with the light and dark soy sauces, and optionally sriracha (for those who like it hot), until everything gets a nice sheen. Then add the udon noodles and continue cooking until they are soft, which takes about 2 minutes. Finally, sprinkle with coriander and sesame seeds and toss to combine.
