Ingredients for 10 servings:

  • 2 ½ kg potatoes
  • 5 large onions
  • 3 handfuls of breadcrumbs
  • 3 cups milk
  • 3 egg yolks
  • 4 slice(s) pork belly (belly meat)
  • 4 slices of pork neck
  • 6 slices of breakfast bacon
  • 6 sausages (Vienna sausages), finely chopped
  • e.g. oil for marinating
  • 2 tsp salt
  • 4 tsp pepper
  • 1 tsp nutmeg
  • some chili powder
  • Fat for the roasting pan

Working time approx. 50 minutes; Total time approx. 50 minutes

The day before, chop the meat into small pieces and marinate it with oil, salt, pepper, and chili powder, then chill. Peel and grate the potatoes and onions. Mix everything with the milk, eggs, and breadcrumbs. Grease a roasting pan and line it with the bacon slices. Stir the marinated meat and the chopped sausages into the mixture. Place everything in the roasting pan and season as desired. Cover and place in a preheated oven (top/bottom heat: 200°C, fan oven: 180°C) for about 2.5-3 hours. Cook uncovered for the last 20-30 minutes until a nice crust forms.
