Ingredients for 6 servings:

  • 1 kg potatoes
  • 3 tsp potato starch
  • 300 g pork or beef
  • 1 onion(s)
  • 3 tbsp oil
  • 1 egg(s)
  • 1 egg yolk
  • 1 tbsp sour cream
  • 1 tbsp breadcrumbs
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 35 minutes

First, prepare the filling for the roll. Cook the meat for about 30 minutes. Meanwhile, finely chop the onion and fry until golden brown. Mince the meat and onion together, season to taste, and add 2 tablespoons of the broth. Alternatively, you can use ground meat. Boil the potatoes for the dough; they can be cooked at the same time as the meat. Peel the cooked potatoes and mash them. Add the potato starch and egg, and mix well. Spread the cooked potato mixture on a damp cloth to form a rectangle. Spread the meat filling over the dough, leaving a little space at the edges. Slowly shape the mixture into a roll and place it on a prepared baking sheet lined with parchment paper. The easiest way to roll it up is to hold the cloth at the ends and lift it slowly, gently loosening the potato mixture from the cloth. Brush the surface of the roll with a mixture of egg yolk and sour cream and sprinkle with breadcrumbs. Bake the roll in a preheated oven at 220°C for about 35 minutes until golden brown. The potato roll can be sliced ​​and served with sour cream.
