Ingredients for 1 servings:
- 180 g white chocolate (optional with nuts), possibly a little more
- 60 g cranberries, dried
- 60 g oat flakes
- 190 g flour
- 3 g baking powder
- 3 g baking soda
- 1 pinch of salt
- 115 g butter, very soft
- 110 g sugar, brown
- 90 g sugar, white
- 1 packet of vanilla sugar
- 5 ml flavoring (baking oil, vanilla)
- 1 large egg(s)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Chop the chocolate into small cubes and mix with the oats and cranberries in a bowl. In another bowl, combine the flour with the baking powder, baking soda, and salt. In a third large bowl, cream the butter with the sugars until creamy; the sugar should no longer crunch. Add the egg and vanilla extract and continue beating until creamy. Add the flour mixture and mix thoroughly. Finally, stir in the chocolate mixture, then mix everything well again with a spatula. Line several baking sheets with parchment paper. Using two teaspoons, place not-too-small heaps of dough onto the sheet, leaving enough space between them. Bake at 160°C (convection oven) for 13-15 minutes. After baking, let cool on the sheet for 1 minute, then cool completely on a wire rack. Enjoy immediately or store in a tin for a short time. The amount and type of chocolate and dried fruit can be varied; just experiment!
