Use Leftovers: Potato Omelette

- 3 Jacket potatoes
- 1 Onion
- 2 tbsp Oil
- Salt and pepper
- 2 Eggs
- 0,5 bunch Chives fresh
- Cut the onion into thin slices, peel the jacket potatoes and cut into thin slices. Heat the oil in a pan, then fry the onion slices until translucent and spread the potato slices as close together as possible, add salt and pepper and fry for 5 minutes while turning.
- In the meantime, whisk the eggs. Pour over the potatoes, distribute and let set for about 10 minutes. Slide the omelette onto a plate and serve with chives.
