Use Leftovers: Potato Omelette

  • 3 Jacket potatoes
  • 1 Onion
  • 2 tbsp Oil
  • Salt and pepper
  • 2 Eggs
  • 0,5 bunch Chives fresh
  1. Cut the onion into thin slices, peel the jacket potatoes and cut into thin slices. Heat the oil in a pan, then fry the onion slices until translucent and spread the potato slices as close together as possible, add salt and pepper and fry for 5 minutes while turning.
  1. In the meantime, whisk the eggs. Pour over the potatoes, distribute and let set for about 10 minutes. Slide the omelette onto a plate and serve with chives.
