Valais-style yeast bread

Ingredients for 1 servings:

  • 1 kg wheat flour
  • 40 g yeast
  • 6 dl milk
  • 1 tbsp salt, approx. (20g)
  • 1 tbsp sugar
  • 100 g butter, soft
  • 120 g lard (available from butchers)
  • 1 egg yolk, for brushing

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours 20 minutes

In a mixing bowl, dissolve the yeast in slightly warmed milk. Then add all ingredients and mix well. Knead the mixture vigorously into a smooth dough (knead and beat by hand for at least 10 minutes). Cover and let the dough rest for about 1 hour. After an hour, lightly knead the dough again, then shape it into a flat loaf, place it on a baking sheet, and let it rest for another 10 minutes. Brush the bread with egg yolk before baking and then bake in a preheated oven (approx. 200°C) on the second lowest rack for 50 minutes.
