Ingredients for 2 servings:
- 200 ml cream (UHT cream), unrefrigerated
- 1 pinch(s) vanilla pod(s), ground
- possibly vanilla flavor, liquid
- 2 tbsp whole cane sugar
- 1 tbsp glucose
- 2 tbsp milk chocolate sprinkles
- 1 sachet of powder (lactase powder) from the health food store

Recipe for the butter shaker – with lactose-free version – cheap, easy and quick
To make this, you’ll need a butter shaker. Pour the room-temperature heavy cream (fresh whipped cream, unrefrigerated, also works) into the butter shaker. Add the butter ball to speed up the churning process and better incorporate the flavors. Add freshly ground vanilla bean from the mill. If you like it extra vanilla, add 2-3 drops of liquid vanilla extract. Add raw cane sugar. Add glucose, as this ensures a beautifully creamy consistency. Add milk chocolate sprinkles (grated chocolate also works. White chocolate is also great as an alternative). For lactose-free butter and buttermilk, add the lactase powder (crush lactase tablets in a mortar beforehand). Attach the nozzle and lid, and shake for about 2 minutes. Just before the butterfat separates from the buttermilk, the mixture will become very firm again. Now be sure to keep shaking. It’s almost ready. You’ll hear the liquid buttermilk when you shake it. Remove the lid and pour the vanilla-chocolate buttermilk through the nozzle slot. Unscrew the nozzle attachment and scoop out the chocolate-vanilla butter with the spatula, then pour it into a butter dish. Finally, remove the butter ball. This delicious chocolate-vanilla buttermilk can be drunk straight away or made into ice cream. Tip: For the latter, simply pour it into an ice cream mold and freeze. The chocolate-vanilla butter tastes delicious with warm croissants and brioches. It can also be made into buttercream for fillings and toppings for cake pops. To do this, mix it with freshly cooked vanilla or chocolate pudding that has been cooled to hand temperature. Fill and decorate cake pops or cupcakes with it.
