Vanilla honey carrots sous vide

Ingredients for 4 servings:

  • 500 g bunched carrots, preferably small
  • 1 vanilla pod(s)
  • 1 tbsp butter or margarine
  • 1 tbsp honey

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 30 minutes

Peel the carrots and remove all but a short piece of the green parts for visual appeal. If necessary, halve them lengthwise if they are too thick. Cut the vanilla pod in half lengthwise. Place the carrots, carrots, and a little butter in a bag and vacuum seal. Preheat the sous vide cooker to 85°C and cook the carrots for 80 minutes. Immediately afterward, melt the honey in a pan and fry the carrots until the honey caramelizes. Tip: If you need the vegetables later, you can cool them in ice water and store them in the refrigerator until ready to use.
