Vanilla – Strawberry – Rhubarb Jam

Ingredients for 1 servings:

  • 1 kg strawberries
  • 1 kg rhubarb
  • 1 vanilla pod(s)
  • 1 ½ kg gelling sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Peel the rhubarb and cut into small pieces. Cut the strawberries into roughly equal-sized pieces. Place in a large saucepan. Add the vanilla bean pulp and the vanilla bean. Let the fruit mixture stand for at least 3 hours. If you don’t want any chunks in the jam, remove the vanilla bean, puree the fruit mixture, and add the bean back in. Bring the fruit mixture to a boil and simmer for about 20 minutes. Remove the vanilla bean, add the gelling sugar, and cook according to the package instructions (about 4 minutes). Immediately fill the jam into jam jars.
