Ingredients for 1 servings:

  • 1,000 g strawberries, cleaned
  • 8 elderflower heads, possibly 10
  • 500 g gelling sugar, 2 to 1 flavored with elderflower
  • 2 tbsp lemon juice

Instructions

Working time approx. 20 minutes; Rest period approx. 5 days; Cooking/baking time approx. 5 minutes; Total time approx. 5 days 25 minutes

Infuse the gelling sugar with 8-10 elderflower heads, keeping the stems as short as possible, and let it steep for 5-7 days. Sift the sugar. Wash, hull, and slice the strawberries. Mix with the flavored gelling sugar and lemon juice. Let it steep for one hour. Bring to a boil while stirring, then simmer for 3-4 minutes. Immediately pour into boiled jars, seal, and let cool with the lids on for one hour. Turn over and let cool completely.
