Vegan apple muffins with spelt flour

Ingredients for 1 servings:

  • 2 cups spelt flour type 630
  • ½ cup spelt flakes (fine leaf)
  • ½ cup coconut blossom sugar
  • 1 cup ground almonds, approx. 100 g
  • ½ cup raisins, chopped
  • 3 medium-sized apples, grated
  • ½ cup rapeseed oil or alternatively coconut oil
  • 1 cup apple spritzer
  • 1 sachet of cream of tartar baking powder
  • 1 tsp cinnamon
  • 1 medium-sized apple, cut into small pieces

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

without wheat flour and without white industrial sugar, approx. 18 muffins

A standard coffee cup is used as a measure. This recipe yields approximately 18 delicious muffins. Combine all ingredients, except for the chopped apple, in a mixer. Finally, add the chopped apple. Fill the batter into muffin tins lined with paper baking cups. Bake the muffins in a preheated oven at 160°C (top/bottom heat) for 30 minutes. After baking, let the muffins cool slightly, as they will still be very soft and fall apart easily, then remove them from the tin.
