Ingredients for 1 servings:

  • 1 lemon(s), juice
  • 5 apples or more, depending on size
  • 600 g spelt flour
  • 300 g brown sugar
  • 2 packets of sugar (tonka sugar)
  • 125 g almonds, ground
  • 1 packet of baking powder
  • 600 ml soy milk (soy drink) with vanilla flavor
  • 200 ml olive oil
  • 4 tbsp, heaped applesauce
  • some carbonated mineral water
  • Cinnamon sugar for sprinkling
  • Fat for the mold

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Grease a springform pan (approx. 36 cm x 25 cm) or a small baking sheet with a baking frame. Preheat the oven to 175°C (top/bottom heat). Peel and quarter the apples, and remove the cores. Make several slashes in the tops, but do not cut all the way through. Then drizzle with lemon juice. Mix the flour, sugar, tonka sugar, almonds, and baking powder in a bowl. In a tall measuring jug, whisk together the vanilla soy milk, olive oil, and applesauce. Add the wet mixture to the dry ingredients and mix quickly. Finally, add a little mineral water and mix briefly. Pour the batter into the pan and top with the apple pieces, with the slashed side facing up. Sprinkle with the sugar and cinnamon mixture. Place immediately in the preheated oven. Bake for approximately 55–60 minutes.
