Ingredients for 1 servings:
- 200 g rye flour (wholemeal)
- 50 g oat flakes
- 50 g hazelnuts, ground
- 2 bananas, ripe
- 50 g brown sugar
- 1 packet of vanilla sugar
- 2 tsp baking powder
- 100 ml soy milk (soy drink), vanilla
- 2 tbsp oil, neutral
- 100 g dried fruits and nuts, mixed
- Fat, for the shape
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
Mix the flour, oats, ground hazelnuts, sugar, vanilla sugar, and baking powder with a spoon. First mash the banana in its skin, then remove it from the skin and press it through the tines of a fork. Add the mashed banana, oil, and soy-vanilla milk to the flour-sugar mixture and mix with a hand mixer until a batter similar to sponge cake batter forms. Then add the dried fruit and nuts, if desired, and mix in. Pour into a greased loaf pan and bake in a preheated oven at 170°C for about one hour. Do the toothpick test! If the cake is too sticky, you can replace some of the rye flour with cornstarch.
