Ingredients for 4 servings:
- 300 g banana(s), ripe
- 140 ml plant milk (plant drink), alternatively water
- 50 g cane sugar
- 1 packet of vanilla sugar
- 320 g wholemeal flour or flour
- 15 g baking powder
- 1 handful of raisins, cranberries or nuts, optional
- Coconut oil or similar for greasing
- 1 banana(s) for decoration, optional
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 25 minutes
Low fat, simple and delicious
Mash the ripe (!) bananas with a fork until no lumps remain. Then add the cane sugar, vanilla sugar, and plant-based milk or water, and stir everything together. Add the flour and baking powder to the mixture in portions, stirring thoroughly as you go. If you like, you can fold in optional ingredients such as raisins or nuts, etc. at the end. Grease a loaf pan and pour the batter into it. If you like, you can decorate the bread with banana pieces lightly pressed into the batter. Place the pan in the oven at 170 degrees Celsius for 40 minutes, then cover with aluminum foil to prevent the batter from overcooking and return it to the oven, covered, for another 30 minutes. The bread should not be too dry in the end and should remain quite moist even when cooled. It tastes even better with almond butter as a spread.
