Ingredients for 1 servings:
- 2 large carrots
- 300 ml soy yogurt (yogurt alternative)
- 6 apples
- some water
- 1 banana(s), mashed
- 50 g almonds, chopped
- some vanilla pulp
- some cinnamon powder
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes
Flour- and sugar-free, moist, and healthy. Makes 12 pieces
First, make applesauce from the apples. Peel and quarter the apples, then boil them with a little water until smooth. Then briefly roast the almonds. Let both cool. Then, grate the carrots, and vigorously mix the yogurt, applesauce, mashed banana, almonds, and spices (to taste) in a bowl. Pour the mixture into the cups of a muffin tin and bake in a preheated oven at 190°C (fan oven) for about 25 minutes. If desired, garnish the muffins as desired.
