Vegan Cauliflower Pudding Oats

Ingredients for 1 servings:

  • 150 g cauliflower, cooked
  • 25 g oat flakes
  • 10 g cream pudding powder, vegan, e.g. B. from reputation
  • 15 g protein powder with vanilla flavor, vegan
  • 180 ml plant milk (plant drink), e.g. soy milk
  • 1 pinch of salt
  • 3 drops of Flavdrops, e.g. Vanilla or Cookie
  • 2 pinches of vanilla powder
  • 10 g erythritol (sugar substitute), light
  • 100 g soy quark (quark alternative)
  • n. B. Fruit

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Oatmeal with cauliflower

Briefly blend the cauliflower in a food processor if you prefer a chunkier texture, or use a hand blender to finely purée it. Combine the cauliflower with the oats, pudding powder, protein powder, plant-based milk, salt, Flavdrops, vanilla, and Xucker Light in a saucepan and stir to combine. Then heat and simmer for a few minutes while stirring. Finally, stir in the soy curd. Transfer the cauliflower pudding oats to a bowl and top with fruit.
