Quick vegan cheese-flavored sauce for vegetables or pasta

Melt the margarine in a saucepan over high heat. Stir in the flour and immediately add the water. The sauce must now be stirred vigorously immediately, otherwise it will start to clump. While stirring, add the Soja Cuisine and the nutritional yeast. The nutritional yeast gives the sauce a cheesy flavor. Bring the sauce to a boil and then simmer on low heat for a few minutes, stirring regularly. The sauce should now thicken quite quickly. Add a little mustard, salt, pepper, soup seasoning, and chives as desired. The mustard enhances the flavor of the nutritional yeast and also gives the sauce the right color. When the right consistency is reached, serve immediately. Goes wonderfully with steamed vegetables and numerous pasta dishes.
