Vegan Clafoutis

Ingredients for 1 servings:

  • 550 g cherry(s), pitted
  • 250 ml vanilla pudding (soy vanilla pudding)
  • 170 ml plant milk (plant drink)
  • 1 tsp white wine vinegar, vegan
  • 100 g brown sugar
  • 1 banana(s)
  • 190 g flour
  • 1 tsp baking powder
  • 1 pinch of salt

Instructions

Working time approx. 1 hour 30 minutes; Total time approx. 1 hour 30 minutes

for a 24cm springform pan

Mash the banana and mix with the milk until smooth. Add the pudding to the banana-milk mixture and mix well. Then fold in the salt, vinegar, and sugar. Finally, add the flour to the mixture and mix well. Butter the 24cm springform pan and sprinkle with sugar to prevent sticking. Distribute the cherries in the pan so that they cover the bottom and then pour the entire mixture over the cherries. Bake at around 180°C for 30-40 minutes, until the clafoutis begins to brown around the edges or until a skewer inserted into a skewer comes out clean and no more batter sticks to the pan. Serve warm with ice cream.
