Working time approx. 20 minutes; Total time approx. 20 minutes

Chocolate cake à la Lucile

Preheat the oven to 150 degrees Celsius (300 degrees Fahrenheit) top/bottom heat. Break the chocolate into pieces and melt together with the butter, either in the microwave on the lowest setting or in a double boiler. Add the sugar and mix everything until smooth. Let cool briefly. In the meantime, separate the eggs and beat the egg whites until stiff peaks form. Then gradually add the egg yolks to the chocolate mixture, along with the flour (40 grams is not a typo!). Finally, carefully fold in the beaten egg whites. Line the bottom of a 28-centimeter baking pan with parchment paper, pour the batter into the pan, and place it in the oven. The cake will be ready in 40 to 45 minutes—no longer, as it should still be moist inside. This is an original recipe from Toulouse and simply a chocolate dream!
