Vegan: Glazed Onion Rings with Mashed Vegetables

The perfect vegan: glazed onion rings with mashed vegetables recipe with a picture and simple step-by-step instructions.

  • 2 piece Carrots
  • 1 piece Parsnip
  • 3 piece Potatoes
  • 1 tsp My vegetable broth *
  • Water for boiling
  • 4 size Vegetable onions
  • 30 ml Sunflower oil
  • 1 tbsp My celery-fennel salt *
  • Nutmeg a.d.M.

To the vegetable mash

  1. Peel, wash and cut the parsnips, carrots and potatoes. Put them in a saucepan, pour the vegetable stock – you can also use salt – over it, pour water over it, bring to a boil and cook. Drain the broth, mash the vegetables and add some of the broth if necessary. Season the whole thing with a little nutmeg.

Galsified onions

  1. Peel, halve and cut the vegetable onions. Put the oil in a higher pan and glaze the onions in it. Scatter some of the celery and fennel salt over it and swirl the pan until the onions have the desired color … Of course you can also brown the onions, but that’s not my taste.

Serving

  1. Place the mashed vegetables on the preheated plates and add the onions.
