Ingredients for 2 servings:
- 3 tbsp chia seeds, each tablespoon approx. 15 g
- 250 ml soy milk (soy drink) or another plant-based drink
- 100 g flour
- 40 g ground almonds or nuts
- ½ pack of baking powder
- 20 g sugar
- e.g. raisins, berries, bananas, nuts, chopped chocolate, rum, cherries, plums, cocoa powder
- some powdered sugar and/or cinnamon for sprinkling
- some oil for frying
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Let the chia seeds soak in 100 ml of soy milk for about 30 minutes. In a separate bowl, mix together the remaining dry ingredients. Once the chia seeds have swollen, add them along with the remaining soy milk and mix everything together. If the mixture is still too thick, add a little more plant-based milk. Heat a little oil in a pan and add the batter. When it starts to bubble, divide the batter into 4 pieces using a spatula and turn the pieces over. Break the batter into even smaller pieces using the spatula and continue frying until the batter is golden brown. Finally, sprinkle the Schmarren with powdered sugar and/or cinnamon. If you like, you can refine the Schmarren with nuts, spices, fruit, cocoa, or rum.
