Vegan lamb's lettuce with heirloom carrot and cucumber

Ingredients for 2 servings:

  • 2 handfuls of lamb’s lettuce
  • ½ heirloom carrot(s), purple
  • ¼ cucumber(s)
  • 2 tsp carrot greens, chopped
  • 4 tbsp vinegar, vegan
  • 2 tbsp walnut oil
  • 2 tbsp lime juice
  • salt and pepper
  • Coconut blossom sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and drain the lamb’s lettuce. Wash and grate the heirloom carrot and cucumber. Make the dressing and season to taste. Mix everything together and serve in bowls.
