Ingredients for 1 servings:

  • 300 g wheat flour
  • 200 g hazelnuts, ground
  • 150 g sugar
  • 1 sachet of vanilla sugar
  • 1 tbsp, heaped soy flour
  • 3 tbsp water
  • 250 g vegetable margarine
  • e.g. hazelnuts for garnishing:

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Mix the soy flour with 3 tablespoons of water. Then knead all ingredients together in a mixing bowl until a smooth dough forms. Preheat the oven to 175°C (top/bottom heat). Form the dough into small balls and place them on a baking sheet lined with baking paper. Press a whole hazelnut into the center of each ball. Then bake on the middle rack for 13-15 minutes until golden brown. Note: Soy flour is used as an egg substitute and works excellently as a binding agent. This recipe makes 60-80 cookies, depending on how large you like them.
