Ingredients for 2 servings:

  • 1 cucumber(s)
  • 1 handful of mint
  • 1 handful of coriander leaves
  • 6 tbsp olive oil
  • 3 tbsp mirin
  • 1 tsp sugar
  • 2 cm ginger, finely grated
  • 1 stalk of lemongrass, cut into fine rings
  • 1 pinch of sea salt
  • 1 pinch(s) of Timut pepper, ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, peel, and thinly slice the cucumber. Place the slices in a salad bowl. Wash and finely chop the mint and coriander. Add to the cucumber slices. For the dressing, combine all ingredients, season to taste. Pour over the cucumbers and serve.
