Vegan vanilla pudding

Ingredients for 1 servings:

  • 2 cups soy milk (soy drink)
  • 4 tbsp cornstarch
  • 2 tbsp sugar
  • 1 vanilla pod(s), pulp
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix 1/3 – 1/2 teaspoon of soy milk with the cornstarch, salt, and the scraped seeds of the vanilla bean. Bring the remaining soy milk to a boil with the sugar. Remove from the heat and whisk in the mixed cornstarch. Bring back to a boil briefly. Pour into bowls rinsed with cold water. Note: The pudding can be turned out once it has cooled.
