Vegetable mix with turkey skewers

Ingredients for 3 servings:

  • 1 eggplant(s)
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 1 bunch of spring onions
  • 3 carrots
  • 2 onions
  • 500 g mushrooms, fresh
  • 2 tomatoes
  • 200 ml vegetable stock
  • 3 tbsp cream cheese (12% fat)
  • 400 g turkey meat (skewers, marinated)
  • 1 pinch(s) parsley, dried
  • 1 jar bamboo shoot(s)
  • some butter or oil
  • salt and pepper
  • Garlic
  • chili flakes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cut all the vegetables into small cubes. First, fry the onions and spring onions in a little butter or oil, then add the carrots. Let it simmer for a while, then gradually add the mushrooms and eggplant. Then add the bell peppers, and finally the tomatoes and bamboo shoots. Now add the vegetable stock, followed by the cream cheese. Simmer until the cream cheese has melted. Season with salt, pepper, garlic powder, and a few chili flakes. Finally, garnish with a pinch of dried parsley. Brown the turkey skewers in the pan and serve. Alternatively, turkey fillet (cut into strips) can also be served with the dish.
