Vegetable Rosti with Chives Quark

The perfect vegetable rosti with chives quark recipe with a picture and simple step-by-step instructions.

  • 500 g Potatoes
  • 500 g Carrots
  • 1 bunch Chives fresh
  • 1 Egg
  • Salt and pepper
  • 1 tsp Curry
  • 1 tbsp Butter
  • 200 g Quark semi-fat
  1. Peel the potatoes and carrots with the peeler and grate coarsely. Wash the chives, pat dry and cut into rolls.
  2. Mix the potatoes, carrots, egg, half of the chives and all the spices well.
  3. Heat a little butter in a pan and fry small hash browns on each side for about 3-5 minutes until golden brown. Set warm.
  4. Mix the quark with the remaining chives, cut into rolls. Season with salt and pepper and serve with the vegetable rosti.
