Vegetarian bagel

Ingredients for 2 servings:

  • 2 bagels
  • 1 ball of mozzarella
  • 6 small cocktail tomatoes
  • 1 handful of arugula
  • Cream cheese, grainy
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Preheat oven to 160°C (fan/convection oven). Cut store-bought or homemade bagels in half. Slice the mozzarella, wash the tomatoes and arugula, then halve the tomatoes. Spread the cream cheese (regular cream cheese will do too) on the top and bottom of the bagels. Adjust the amount to taste. Season to taste. Place a slice of mozzarella on the top and bottom of the bagels and place tomatoes on top. Spread arugula on the bottom of the bagels and carefully place the top layer on top. Bake both bagels in the oven for 3-5 minutes; you’ll see they’re nicely browned.
