Vegetarian Eggplant Patties

The perfect vegetarian eggplant patties recipe with a picture and simple step-by-step instructions.

  • 300 g Hot oven eggplants, see my cookbook
  • 3 tbsp Millet flakes
  • 1 tsp Hot mustard
  • 2 tsp Maple syrup
  • 100 g Smoked tofu
  • 0,5 tsp Onion powder
  • 0,5 tsp Garlic powder
  • 2 tbsp Breadcrumbs
  • Salt pepper
  1. The recipe was created by using leftovers from the hot oven aubergines. Mix the ingredients in the food processor to a medium-coarse mass. Small pieces of eggplant may still be visible.
  2. Form approx. 4 patties out of the mixture and roll them all around in breadcrumbs. Either fry on both sides in a little heated oil in a pan, or bake on a baking sheet lined with baking paper on the middle rack at 200 degrees for 25 minutes until crispy. Turn the patties once after approx. 15 minutes.
