Vegetarian Eggplant Patties
The perfect vegetarian eggplant patties recipe with a picture and simple step-by-step instructions.
- 300 g Hot oven eggplants, see my cookbook
- 3 tbsp Millet flakes
- 1 tsp Hot mustard
- 2 tsp Maple syrup
- 100 g Smoked tofu
- 0,5 tsp Onion powder
- 0,5 tsp Garlic powder
- 2 tbsp Breadcrumbs
- Salt pepper
- The recipe was created by using leftovers from the hot oven aubergines. Mix the ingredients in the food processor to a medium-coarse mass. Small pieces of eggplant may still be visible.
- Form approx. 4 patties out of the mixture and roll them all around in breadcrumbs. Either fry on both sides in a little heated oil in a pan, or bake on a baking sheet lined with baking paper on the middle rack at 200 degrees for 25 minutes until crispy. Turn the patties once after approx. 15 minutes.
