Ingredients for 4 servings:

  • 500 g onion(s), diced
  • 50 g butter or margarine
  • 1 bay leaf
  • 80 g bread(s) (sourdough bread)
  • 500 ml vegetable stock
  • 1 tbsp mustard, medium hot
  • 1 tbsp oregano, dried
  • 1 tbsp thyme, dried
  • Salt
  • pepper, black

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

tastes good with spaetzle, potatoes, patties and vegetarian sausages

Peel and dice the onions. Melt the butter in a saucepan. Add the onions and bay leaf and simmer over medium heat for about 30 minutes, until the mixture is nicely browned. Meanwhile, dice the bread. Remove the bay leaf and add the broth. Add the bread cubes and simmer for 5 minutes. Season to taste with mustard, oregano, thyme, salt, and pepper. Blend until smooth and serve.
