Vegetarian "liver sausage"

Ingredients for 4 servings:

  • 120 g onion(s)
  • 2 cloves garlic
  • 20 g butter
  • 100 g hazelnuts, chopped
  • 5 tbsp nutritional yeast
  • 1 bay leaf
  • 1 tsp marjoram
  • 1 tsp thyme
  • 1 tsp vegetable broth
  • pepper
  • 6 tbsp water
  • 30 g butter, soft

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Finely dice the onions and garlic cloves and brown them with 20g of butter over low heat. Add the chopped hazelnuts, nutritional yeast, finely chopped bay leaf, a generous teaspoon of marjoram, thyme, vegetable stock, pepper, and water to the pan. Stir all ingredients until smooth and finally toss in 30g of softened butter. The “liverwurst” will keep in the refrigerator for about 5-6 days.
