Ingredients for 5 servings:
- 250 g smoked tofu
- 150 g gherkins
- 3 tbsp cucumber juice
- 2 tsp sugar
- 300 g mayonnaise, egg-free
- salt and pepper
- Paprika powder

with egg-free mayonnaise also suitable for vegans
Cut the smoked tofu and pickles into small, thin strips and place them in a sufficiently large bowl. Blend the mayonnaise with the pickle juice until smooth, season to taste, add, and mix. Let it sit for about 10 minutes; the better the flavor, the better. I tried the salad at work, and it was an absolute bestseller.
