Ingredients for 6 servings:

  • 250 g bread(s), stale
  • 1 large onion(s), finely chopped
  • 1 bunch of herbs, fresh as needed, finely chopped
  • 1 tsp capers, finely chopped
  • 2 gherkins, finely chopped
  • 2 tomatoes, finely chopped
  • 200 g mushrooms, finely chopped
  • 3 eggs
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • breadcrumbs if required
  • some flour for dusting
  • 100 ml cream
  • e.g. vegetable broth
  • some butter
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Soak the bread in broth. Squeeze out the excess water, place it in a bowl, and knead into a paste. Sauté the finely chopped ingredients in melted butter. Beat the eggs and add the spices. Add all the ingredients to the bread in the bowl and knead thoroughly. Then form it into a roast (adding a little more breadcrumbs if desired). Dust the roast all over with a little flour and fry in hot oil until browned. Then deglaze with cream and, if desired, more broth, and simmer for about an hour at a low temperature. We like this with jacket potatoes and red cabbage, or peppers or kohlrabi.
