Vegetarian – Sweet Potato Casserole

- 250 g Orange sweet potatoes
- 100 g White mushrooms
- 100 g Carrots
- 1 Onion
- 3 tbsp Ajvar spicy
- 2 tbsp Tomato ketchup
- 125 g Water
- 2 Eggs
- 100 g Grated mozzarella
- Boil the sweet potato al dente, allow to cool, peel and cut into pieces.
- Clean the mushrooms, peel and chop the carrots and onions, place in a baking dish with the sweet potato pieces, stir well.
- Mix the Ajvar, ketchup, eggs and water in a mixing vessel with a whisk to form a sauce, pour this into the baking dish, stir again.
- Finally, sprinkle the grated cheese into the baking dish and place it in the preheated oven (175 ° C), bake for about half an hour.
