Vegetarian – Sweet Potato Casserole

The perfect vegetarian – sweet potato casserole recipe with a picture and simple step-by-step instructions.

  • 250 g Orange sweet potatoes
  • 100 g White mushrooms
  • 100 g Carrots
  • 1 Onion
  • 3 tbsp Ajvar spicy
  • 2 tbsp Tomato ketchup
  • 125 g Water
  • 2 Eggs
  • 100 g Grated mozzarella
  1. Boil the sweet potato al dente, allow to cool, peel and cut into pieces.
  2. Clean the mushrooms, peel and chop the carrots and onions, place in a baking dish with the sweet potato pieces, stir well.
  3. Mix the Ajvar, ketchup, eggs and water in a mixing vessel with a whisk to form a sauce, pour this into the baking dish, stir again.
  4. Finally, sprinkle the grated cheese into the baking dish and place it in the preheated oven (175 ° C), bake for about half an hour.
