Ingredients for 6 servings:

  • 800 g apples
  • 400 ml water
  • 2 tbsp sugar
  • 1 packet of pudding powder (vanilla)
  • 100 g raisins
  • 1 lemon(s), the juice
  • 1 tsp cinnamon
  • 4 tbsp oat flakes (whole grain)
  • 100 g almond(s), sliced
  • 2 tsp butter
  • 2 tbsp sugar
  • 400 ml sweet cream
  • 2 packets of vanilla sugar
  • 2 packs of cream stiffener

Wash and peel the apples. Then quarter and slice or dice them. Add 400 ml of water and bring to a boil. Add the raisins to the apples and sauté until softened to the desired consistency. Meanwhile, mix the custard powder with a splash of water until smooth and add to the apples. Bring the apple compote to a boil and season with sugar and fresh lemon juice. Transfer the compote to a large bowl and let it cool (it’s best to prepare it the day before). Caramelize the oats with butter and the sliced ​​almonds in a pan with 2 tablespoons of sugar and the cinnamon. Transfer to a plate and let it cool. Once the compote has cooled, whip the cream with 2 packets of vanilla sugar and, if necessary, the cream stabilizer until stiff. Then spread it over the apple mixture. Spread the dry brittle over the cream. Tip: The whole thing can also be easily divided into serving bowls or glasses.
