Very fine plum cake

Ingredients for 1 servings:

  • 350 g plum(s)
  • 100 g butter, room temperature
  • 125 g sugar
  • 3 eggs
  • 200 g flour
  • 1 tsp baking powder
  • 1 pinch of cinnamon
  • 1 pack orange peel, grated
  • 2 cl liqueur (plum liqueur)
  • 1 tbsp cocoa powder
  • Fat and breadcrumbs for the mold
  • Cake icing (chocolate glaze) or powdered sugar

Beat the eggs with sugar and butter until fluffy. Gradually add the flour, baking powder, cinnamon, orange zest, plum liqueur, and cocoa powder and stir until a creamy batter forms. Grease a 26 cm springform pan and dust with breadcrumbs, flour, or ground nuts, then pour in the batter. Wash and pit the plums, then arrange them in a fan shape in the pan. Bake at 180 degrees Celsius (fan oven) for about 45 minutes. Let cool and decorate with chocolate glaze or dust with powdered sugar, if desired.
