Wafer roll muffins

Ingredients for 1 servings:

  • 250 g flour
  • 2 tsp baking powder
  • 80 g hazelnuts, ground
  • 2 tsp cocoa powder, soluble
  • 2 eggs
  • 120 g sugar
  • 75 ml oil, neutral
  • 300 ml buttermilk
  • some wafer rolls, filled (nut nougat), quantity varies depending on length

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

In a bowl, combine flour, baking powder, hazelnuts, and cocoa powder. In a second bowl, whisk together the eggs, sugar, oil, and buttermilk until the sugar has dissolved. Then, mix both mixtures well. Line a muffin tin with paper baking cups and fill with the batter. For each muffin, cut one or two (depending on the length) wafer rolls into four pieces and place one of the pieces into each muffin “corner.” Bake the muffins at 160°C (convection oven) for 20 to 25 minutes.
