Ingredients for 1 servings:
- 5 egg yolks
- 5 tbsp water, hot
- 100 g sugar
- 1 lemon(s), untreated, zest
- 150 g flour
- ½ tsp baking powder
- 1 tbsp rum
- 5 egg whites
- 1 pinch of salt
- little oil for the waffle iron
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Whisk the egg yolks, water, sugar, and lemon zest until frothy. Combine the flour and baking powder and add to the egg-sugar mixture. Add the rum. Finally, whisk the egg whites with a pinch of salt until stiff peaks form and fold in. Bake as usual in a lightly oiled waffle iron.
