Ingredients for 2 servings:

  • 5 large eggs, beaten
  • 1 medium-sized tomato(s), diced
  • 1 bell pepper(s), color to taste, diced
  • 1 medium-sized potato(s), diced
  • 1 onion(s), finely diced
  • 50 g Cheddar cheese, sliced
  • salt and pepper
  • Olive oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Cowboy Omelette, savory

Cook the potato pieces for about 10 minutes. Meanwhile, sauté the onion in the oil until translucent, then add the drained potatoes. Do not fry the potatoes; just let them cook. Season with salt and pepper. Then add the bell peppers. Just before the bell peppers are cooked, add the tomatoes and cheese. Finally, pour the beaten eggs over the vegetables and stir gently. Let the egg set, then serve with a nice garnish.
