Ingredients for 4 servings:

  • 5 eggs
  • 150 g sugar
  • 1 vanilla sugar
  • 500 g flour
  • 1 baking powder
  • 100 g raisins (optional)
  • 1 cup(s) mineral water or milk for dilution
  • Clarified butter or oil for frying

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Soak the raisins in hot water for 10 minutes, then drain. Whisk together the eggs, sugar, and vanilla sugar until creamy. Add the flour and baking powder, pour in the mineral water/milk, and mix everything with a hand mixer on high for 2 minutes. Squeeze the raisins well, then add them. Let the batter swell for about 10 minutes. Heat the clarified butter/oil in a non-stick pan, drop a tablespoon of batter around the edges, and fry uncovered, turning when the edges are brown and crispy. Serve with vanilla sauce and/or fruit compote.
