Ingredients for 12 servings:

  • 2 small white cabbages
  • 12 tbsp white vinegar (e.g. spirit vinegar)
  • 2 tbsp sugar
  • 250 g bacon
  • 4 onions
  • salt and pepper

Halve the cabbage heads, removing the stalks, and finely grate the cabbage. Bring water to a boil with 4 tablespoons of the vinegar, then briefly boil the shredded cabbage. Then remove from the water (ideally only leave it in for about 1 minute at the most). Drain and place in a salad bowl. Finely chop the bacon and onions. Then fry the bacon in a pan and sauté the onions until translucent. Add the remaining 8 tablespoons of vinegar and plenty of the spices. Pour the spice mixture from the pan over the cabbage. Mix well and let it marinate. Tastes great straight away – but you can also enjoy the salad two days later, well-marinated.
