Christmas dessert, easy to prepare

Peel, core, and roughly dice the apples. Caramelize the sugar in a saucepan, deglaze with the wine, add the speculatius spice, and reduce slightly. Add the apples and sauté until soft. Then chill. Chop the chocolate and heat with the cream until melted. Let cool slightly, then fold in the quark. Season to taste with a little lemon juice. Transfer the mixture to a freezer bag, snip off a corner, and pipe the cream evenly into glasses. Chill. Place the speculatius in a freezer bag and chop it up. Spoon the baked apple mixture onto the chocolate and quark cream, then top with the crumbled speculatius cookies. Chill until ready to serve. Tip: This recipe is perfect to make a day in advance.
