Ingredients for 1 servings:
- 150 g Skrei fillet(s) (winter cod)
- 5 g herbs of Provence, frozen
- some sea salt
- some Szechuan pepper
- 1 lime(s)
- 1 shot of white wine
Instructions
Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Cooking with what’s there.
Wash the Skreiloin and pat dry. Skin the loin, wash it again, and pat it dry. Cut a pocket into the loin. Open it up, drizzle with lime juice inside and out, and season with sea salt and Szechuan peppercorns. Add a splash of white wine, sprinkle the loin with the chopped herbs, and place 2-3 lime slices in the pocket. Close the pocket again. Let it marinate for 10 minutes. Wrap the loin, wine, and herbs in roasting foil and seal it tightly. Steam on the lowest rack at 150°C (fan oven) for 10-15 minutes (depending on thickness). Cut open the top of the foil (careful of hot steam!), arrange, and serve.
