Wholemeal spelt cookies

Ingredients for 1 servings:

  • 200 g wholemeal spelt flour
  • 125 g butter or margarine, soft
  • 15 g vanilla pudding powder
  • 50 g coconut blossom syrup (or equivalent amount of another sweetener)
  • 1 tbsp date puree
  • ½ lemon(s), zest
  • 1 pinch of salt (a small pinch)
  • some cinnamon, about 1/2 tsp – at your discretion

Working time approx. 25 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 35 minutes

First, combine the flour with the vanilla powder and cinnamon and set aside. Mix the softened butter or margarine with the coconut blossom syrup and date paste until well blended. Note: I usually make my own date paste. I simply take some pitted dates and puree them very finely with a hand blender. I then place the mixture in a sealable container and use it regularly to sweeten dishes. Then add the lemon zest and a small pinch of salt and mix. For the lemon zest, it is recommended to use an untreated (organic) lemon, as it contains fewer or no harmful substances. Wash thoroughly, dry, and finely grate the yellow part of half a lemon (caution: the white part of the lemon peel is somewhat bitter, so only use the yellow part for the dough!). Now stir the flour, vanilla powder, and cinnamon mixture into the mixture and refrigerate overnight. The next morning, roll out the dough (approx. 4-5 mm thick). Cut out shapes as desired and place on a prepared baking sheet. Bake in a preheated oven (180 degrees Celsius with conventional heat) for approximately 8-10 minutes. Additional information and tips: The cookie dough will become relatively hard in the refrigerator, but after a few simple steps, it’s easy to roll out and handle. If you place a layer of cling film under and over the dough while rolling it out, it’s easier to handle and process. This recipe is sufficient for about 1 baking sheet (approx. 30 cookies). Have fun preparing and decorating the cookies as you wish! In the cold season, this is a perfect morning activity for all ages.
