Wild garlic cheese spaetzle

Ingredients for 4 servings:

  • 1 bunch of wild garlic
  • 350 g flour
  • 5 eggs
  • 3 tbsp milk
  • salt and pepper
  • n. B. Nutmeg, possibly
  • 250 g mountain cheese or Emmental
  • 1 onion(s)
  • some clarified butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

delicious spring dish

First, grate the cheese. Slice the onion into rings and fry in clarified butter in a pan over medium heat until brown. Finely chop the wild garlic and make a dough from the flour, eggs, and milk. Season with salt (about 1 teaspoon), pepper (if you like), and nutmeg. Now add the wild garlic to the dough and stir in gently. Heat water in a large pot and add salt. Either spread the spaetzle dough onto a wooden board and scrape it into the water with a knife, or grate it in portions through a spaetzle grater or press it through a press into the salted water. When the spaetzle rise to the top, they are done. Strain the cooked spaetzle, place it in a baking dish, and stir in a little more of the cheese as you go. Continue this process until all the dough is used up. Finally, add a little more cheese to the top. Now place the baking dish in the oven at 200°C (top/bottom heat) for about 15-20 minutes. Serve with the onions and a green salad. Tip: Other herbs would also be delicious in spaetzle dough.
