Wild garlic spaetzle

Ingredients for 4 servings:

  • 400 g wheat flour
  • 100 g wild garlic
  • 4 eggs
  • some salt
  • Water, boiling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Finely chop the wild garlic and add it to a bowl with the flour and eggs. Mix everything with the dough hook of a hand mixer until the dough bubbles. Season the dough with salt, stir again, and press it through the spaetzle press into boiling water. Cook for 4-5 minutes and serve with pesto, or simply with butter and salt. You can also cook the spaetzle for just 3 minutes, drain in a sieve, and freeze. To thaw, simply remove the desired amount of spaetzle from the freezer, add it to boiling water for 2-3 minutes, and then serve.
