Wild Strawberry Jam – Classic

The perfect wild strawberry jam – classic recipe with a picture and simple step-by-step instructions.

  • 600 g Wild strawberries
  • 100 ml Orange juice
  • 100 ml Grated tonka beans
  • 100 ml Lemon juice
  • 350 g Preserving sugar 2: 1
  1. Rinse the forest berries very briefly and dry them on crepe.
  2. Then put the fruits in a bowl, add orange juice, preserving sugar, lemon juice and refine with a little tonka bean. Let the juice steep for a good 2 hours.
  3. Bring the mixture to a boil and simmer for a good 4 minutes while stirring, then make a gelling test. Remove any foam that occurs with a spoon.
  4. Fill the finished mass into prepared glasses, close with a lid and let cool.
